This recipe is simply boiled eggs sliced in half and then pan-fried and coated with exotic spices, topped off with freshly chopped coriander.
It is an incredible variation to an egg curry, an alternative to the saucy curries, yet this has such a depth of flavour if you use quality spices and make Laxmi's garam masala.
A quick and easy dish to take to a party, picnic or BBQ. Enjoyed hot or cold.
Ingredients
4 cups water
4 eggs
1 tablespoon oil
1/2 teaspoon fresh green chilli, minced
1/4 teaspoon fresh garlic, minced
1/4 teaspoon fresh ginger, minced
1/4 teaspoon salt
1/4 teaspoon garam masala
1/4 teaspoon turmeric powder
Directions
In a medium saucepan, bring water to boil. Place eggs into boiling water and cook for 7 minutes. Cool under cold water, peel eggs and cut in half lengthways.
In a large frypan, heat oil on a medium heat. Add chilli, garlic, ginger, salt, garam masala and tumeric. Stir paste to infuse masala. Place eggs yolk side down in frypan for 3 minutes. Cover both sides in masala paste.
Place eggs on a plate and drizzle remaining oil from frypan over eggs and garnish with coriander.
