Sweet Pastry Bites I Sharkapara Gujarati Recipe


3 cups white flour

3 teaspoons cornflour

1 cup boiling water

3/4 cup sugar

1 teaspoon sesame seeds

1/2 cup clarified butter, melted
1 litre of oil for deep frying


    In a medium bowl, combine both flours. Make a well in the middle. In another small bowl, combine boiling water, sugar and sesame seeds. Stir until sugar dissolves. Pour melted clarified butter into the well of flour mix and then pour hot sugar mix on top. Combine with hands and knead into a pastry.

    Portion pastry into 1/4 cup sized balls. Roll pastry into 22cm sized circles. Use a pastry cutter to diagonally cut 2cm apart then horizontally to form diamond shapes.

    Heat oil in wok on a medium heat and carefully place diamonds into oil. Cook for 3-4 minutes or until golden brown. Drain on paper towel.

    Serve once cooled, store in an airtight container for up to 3 weeks.
