Spicy Deep Fried Bread I Tikkhi Puri Gujarati Recipe


1 cup white flour

1/2 cup wholemeal flour

1 teaspoon cornflour

2 1/2 tablespoons clarified butter, melted *
1 teaspoon fresh green chilli, minced

1 heaped teaspoon salt

1/4 teaspoon turmeric powder

6 tablespoons boiling water

1 litre oil for deep frying
Optional: 1 tablespoon fresh coriander
    * Substitute: butter 


      In a medium bowl, combine all 3 flours. Make a well in the middle and pour in clarified butter, add chilli, salt, turmeric, chopped coriander and boiling water. Using hands knead mixture into a stiff dough. If dough is dry or flaky, wet hands and knead or add small amounts of water, alternatively, if sticky, sprinkle flour.

      Portion mixture into teaspoon sized balls. Using a rolling pin, roll each ball into 7cm sized circles. Heat wok on a high heat and deep fry puris for 5-10 seconds each side or until it puffs and is lightly browned.

      If puri'ss are too oily, your oil temperature is too low. Drain on paper towels.

      Serve hot or cold with your choice of curry.
